Apple pastries

Serves 4

Preparation time: 10 minutes 
Cooking time: 25 - 30 minutes 

Ingredients
1 sheet of ready rolled puff pastry 
4 apples, cut into half and sliced 
1 Lemon, juiced 
1 tsp ground cinnamon 
2 tbsp demerara sugar 

Method
Preheat the oven to 180c. 

Put the lemon, sugar and cinnamon into a bowl and mix.  Add the apple slices and mix. Put to one side. 

Cut the pastry into 4 equal pieces and put on to a baking tray.  You don't want the pastry to touch and so you might need two baking trays.  Take a blunt knife and, leaving roughly a 3cm border, with a blunt knife, score a rectangle and with a fork poke holes inside that rectangle.  Line the apples nicely also inside the rectangle.

Put into bake for 25-30 minutes until golden.
