Bacon, cheese and spring onion beer bread

Serves 8 as a side dish

Preparation time: 15 minutes
Cooking time: 45 - 50 minutes

This bread is so easy to put together and yet tastes absolutely amazing. Don’t overbeat the cream cheese mix - you want the little pockets.

Ingredients
170g cream cheese
4 spring onions, sliced
8 slices of streaky bacon, cooked and cut into pieces
120g cheddar cheese, grated
Black pepper
375g plain flour
2 tsp baking powder
1 tsp salt
1 tbsp caster sugar
240ml beer
1 egg

Method
Preheat oven to 180c and grease a loaf pan with butter.

Put all of the cream cheese, ¾ of the spring onions, ¾ of the bacon and ¾ of the cheddar into a bowl. Season with salt and pepper and gently mix with a wooden spoon.

Put the flour, baking powder, salt, and sugar into a bowl and mix with a balloon whisk.  Add the beer and egg and mix.

Fold the cheese mixture through the batter until just combined. 

Put the batter into your loaf tin and top with the remaining bacon, spring onions and cheese.  Cook for 50 minutes or until golden and a skewer comes out clean.  If the bread is not cooked, put back in for 10 minutes before retesting.
