Baharat spice blend

Makes 2½ tablespoons

Preparation time: 5 minutes 

Ingredients
1 tbsp cumin seeds * 
2 tsp coriander seeds * 
½ tsp whole cloves * 
1 tbsp black peppercorns * 
1 tsp shelled green cardamom pods * 
½ cinnamon stick 
Good grating of nutmeg - maybe 12 grates 
2 tsp paprika 
½ tsp ground allspice

* these are whole spices, if you would rather, use just ground spices, use just ¾ tsp of ground to every 1 tsp of whole 

Method
In a small frying pan, dry-roast the whole spices until you can smell the aromatic aromas (1-2 minutes). You should put them in the pan and move them constantly to stop them from burning.  Remove from the pan and grind to a powder. Combine with the remaining ingredients.  

If you are using all ground spices then just combine all spices. 

Keep in a small jar with a tight fitting lid.
