Baked wings with a chilli beer sauce

Serves 4

Preparation time: 10 minutes 
Cooking time: 30 minutes 

Ingredients
4 heaped tbsp cornflour  
1 tbsp baking powder 
½ tbsp seasoning (chicken, peri peri, shawarma etc, I used aromat)  
½ tsp crushed black pepper  
2 tbsp oil  
1 ½ kg chicken wings

Savoury caramel 
250ml beer/larger  
3 tbsp golden syrup 
1 tsp salt 
1 tsp chilli flakes - or more according to how hot and spicy you want them to be

Method
Preheat the oven to 200c.

Put the oil in a large oven tray. 

Put the cornflour, baking powder, seasoning and black pepper into a bowl and mix.  Coat your chicken wings and tap off any excess and place into the oven tray.  You need to use a large tray so that the wings have space around them and are in a single layer, this is important to get them crispy.  Put into the oven for 15 minutes. 

Alternatively you can cook these in your air fryer in batches. 

Meanwhile put all of the caramel ingredients into a saucepan over a medium heat and let it bubble away. 

Turn your wings over and put back in the oven and turn off your caramel.  The wings will take another 10-15 minutes and the cooling caramel will thicken. 

Remove the wings from the oven and put into a large bowl, cover with the caramel and toss the wings so that they become covered in the sauce.
