Brie, prosciutto and fig toastie

Serves 1

Ingredients
2 slices of thick bread
50g butter
4-6 slices of soft cheese such as taleggio or brie
2 slices of prosciutto or parma ham
1-2 preserved figs, sliced (or fig relish or jam if you cannot find preserved)
Flaky salt
Black pepper
2 tsps oil

Method
Put a pan on medium to heat.

Meanwhile, butter your bread.  On one side put the cheese so all of the bread is covered, drape the ham over the other slice and top the cheese with the slices of figs, a little salt and some freshly ground black pepper. If you are using fig relish, put this directly on to the bread and top with the ham.

Put the ham topped bread on top of the cheese and fig slice and butter the very top of the sandwich. Put a tsp of oil into the pan.

Put the sandwich in butter side up down and quickly butter the top. Cook for 3-4 minutes or until golden, you want this to warm slowly so that the cheese has time to melt a little.  When the first side is golden, carefully flip over, adding another tsp of oil if needed.  Gently push down a little on the sandwich with a fish slice.  When the second side is golden, remove, cut in half and try not to burn yourself as you dive in.
