Cauliflower leaves

Serves 4 as a side dish

Preparation time: 10 minutes
Cooking time: 30 minutes

How many times have you had cauliflower and just thrown away the leaves? Me too, more times than I can count. Until that is I tried roasting the leaves.

Ingredients
Leaves of 1 cauliflower 
1 tbsp oil 
1 tsp seasoning mix - I quite like paprika and onion or Portuguese but use whatever seasoning you have and like 

Method
Heat the oven to 180c. 

Either keep your leaves whole or cut them into pieces.  Drizzle the oil over the leaves and rub into the leaves a little.  Put the leaves into a baking tray and sprinkle the seasoning over.  Roast for 20 minutes then jiggle the pan and put back in for another 10 minutes until tender and a little charred around the edges. 

Check the seasoning and adjust if necessary.
