Cauliflower wraps with hummus and harissa

Serves 4

Preparation time: 10 minutes
Cooking time: 30 - 40 minutes

Ingredients
1 cauliflower 
2 tbsps oil 
1 tsp ground cumin 
1 tsp smoked paprika 
1 tsp chilli flakes 
1 tsp salt 
1 cauliflower, cut into florets 
4 soft tortilla wraps 
8 tbsps hummus 
8 tsps harissa paste 
6 tomatoes, chopped 
8 tsps garlic mayonnaise 
4 tbsps parsley, finely chopped 

Method
Heat the oven to 180c. 

Mix the oil and seasoning together.  Cut the leaves off of the cauliflower and put into the fridge for cooking for another dish (or cook now and put to one side cooked for later).  Cut the rest of the cauliflower into florets and put into a roasting dish.  Drizzle the seasoned oil over the cauliflower and put into the oven for 20 minutes and then jiggle the pan and put back into the oven for another 10 minutes until nicely soft and gorgeously golden.  Check the seasoning and adjust if necessary. 

When your cauliflower is cooked, turn off the oven.

Take your tortilla wraps and spread 2 tbsps of hummus on to the wrap.  Put the harissa on the top of the hummus. Now put the cauliflower and tomatoes over the top and drizzle with the garlic mayo.  Top with the parsley and some salt and serve.
