Chicken mayo sandwich

Preparation time: 10 minutes 

Ingredients
120g chicken breast
1-2 tbsps mayonnaise
Aromat or salt to taste
Freshly ground black pepper
4 slices of bread (I really like M&S Oaty bread)
8 tsps butter
Small handful of rocket, watercress or lettuce

Method
Take your chicken and cut, I like to do some of the chicken into slices or small chunks and some I like to shred, for me this works the best.  Put the chicken into a bowl and add 1 tbsp of mayo and with your fork slightly mash the chicken as you stir, because some of the chicken is shredded it shouldn't mash all of the chicken so you should have some texture to it. If you need a little more mayo then add a little more until you get the consistency you like but don’t be tempted to add too much, it should be more chicken than mayo.  Add some salty seasoning such as aromat etc and a little pepper and mix.

Butter your bread, spread the chicken mayo over 2 slices of bread, add a handful of leaves of your choice, put the lid on and marvel at how something so simple is so delicious.
