Chiu chow chilli oil fried rice

Serves 2

Preparation time: 5 minutes
Cooking time: 15 minutes

Ingredients
250g pack of microwaveable basmati rice
1 tbsp chiu chow chilli oil (a good mix of oil and sediment so stir first)
200g frozen peas
2-3 spring onions, finely sliced
Oil
2 eggs
Salt
White pepper

Method
While you chop up your spring onions, put the rice into the microwave for 2 minutes.  When the rice is done, put it to one side and put the peas in on 30 second blasts stirring through between blasts until they are not frozen.  If you do not have a microwave just put the rice and peas into the wok with a little water and a lid on for a few minutes and then remove to one side while you carry on with the recipe.

Take your wok and put the chilli oil in.  Put the rice into the pan and stir through.  Add the frozen peas and stir through, making sure there are no lumps and that the chilli oil is well distributed.  Season with salt and white pepper and then add ¾ of the spring onions.  Stir through and in a separate pan, fry your egg.

Put 2 tsps of oil into a frying pan, break your eggs in and fry until done to your liking, making sure you stir your rice from time to time to stop it burning.

Divide the rice between your bowls and top with your fried egg and the remaining spring onions.  Season your egg with salt and pepper, and a touch more chiu chow.
