Today we were back on the Pad Thai search, yet another tweak, yet another change, yet another just not quite right recipe.  I think we are more on track now but it still is not perfect.  I am baffled really why I just cannot get this recipe quite right.  I am going to change the tamarind paste I use and lower the amount and the fish sauce quantity and try again next week.
