In one of my cooking magazines we read about Garofalo buffalo mozzarella which apparently melts really nicely, much nicer than other mozzarella.  We all adore pizza and so we thought we really must try - well, any excuse really.

My midweek cheats tip is to buy flat garlic bread to make a midweek cheat pizza, it is so nice, it is easy, the garlic butter keeps it moist and gives it a gorgeous taste.  If you don’t fancy garlic bread then just buy a nice stone baked pizza base.

The first thing I do is cut the mozzarella and put it on kitchen towel to dry out and I change the kitchen roll a few times.  The reason I like to do that is often fresh mozzarella on pizza in a commercial oven just has lots of liquid come out of it and makes the whole thing a little soggy. 

I then make my pizza base sauce.  I do this by frying off an onion on a medium heat until it is translucent.  I then add a couple of cloves of garlic.  Now I LOVE garlic so add maybe 3 cloves.  If you love it less just put in 1.  I then add the chilli flakes and stir and then add tomato paste and cook for a few minutes.  I then add tinned tomatoes, salt, pepper, sugar and crushed mixed herbs. I then cook it for 20-30 mins while I get the oven really hot and prep the toppings.  Pizza here tends to be seafood, margarita, salami and chilli and ham and pineapple.  I know pineapple is controversial but it is my absolute favourite.
