Friday I found some absolutely gorgeous strawberries, big, deep dark red and juicy and with the Wimbledon finals being this weekend I was inspired to make something with sparkling wine and strawberries and the recent G&T lemon cheesecake made me think it would work as a Wimbledon inspired cheesecake which I made and only got around to trying today.  My goodness it was good.  So good, it was so creamy and delicious and the strawberries were so fully of flavour.
