In Cook Eat Repeat Nigella has a section on brown food. Brown food is the bane of a food photographers life I think. Making brown food look attractive is very difficult and yet usually it is tasty delicious, full of flavour and a joy to eat. Today we made the oxtail bourguignon which was slightly left field as it uses not only oxtail rather than the usual beef but also caraway seeds and some spices. Although not usual or a classic bourguignon but really it was really divine. The flavours were deep, the spices giving off so much flavour and yet they mellowed into the background and so were not so pronounced at all so that you would know exactly what they were without thinking about it, a great use of spices and really so delicious.
