There was some leftover beef and with the sun shining something light and tasty was the order of the day.  I also bought some beautiful fresh tomatoes which I love to leave in the sun for a while to warm through, the taste really does shine with natural warmth from the sun. 

Rummaging in the fridge I also had a bag of watercress so lunch today was a beautiful beef tomato and watercress salad. Very few ingredients very simply prepared but so nice, it really was the perfect lunch.
