Today was a really long busy day and by the time I eventually got into the kitchen it was quite late and the dish I had planned to cook would have taken too long.  I found myself rummaging through the fridge to see what I could find to make something quick.  I found half a stock pot, half a pot of crème fraiche, 7 pieces of leftover bacon, half a pot of pesto, half a punnet of mushrooms and half a packet of penne, perfect.

I cooked the bacon and mushrooms on a high heat while the pasta cooked then added the stock pot, pesto, crème fraiche and Parmesan, warmed through then I added the pasta and 15 mins from start to finish was at the table with a glass of wine.

Pesto pasta, a true leftovers meal without feeling at all like a meal of leftovers, it was fantastic!
