Having tested, retested and finalised our puttanesca lasagne, today was the final run to ensure the recipe really does work, and to get a picture of it.
Now as many of you may know, patience is really not my strong point. I had been cooking the sauce and the whole house smelt amazing. The longer this went on, the more I realised just how hungry I was. Now lasagne is not a quick dish, and most definitely not one that can be rushed. As soon as I was happy with the sauce I rolled out the pasta and assembled the dish and in it went to bake for 40 minutes.
By the time this golden beauty emerged from the oven I ignored my very cardinal rule, leave the lasagne alone to sit for 10 minutes before cutting. Did I adhere to my own rule? Of course not, it smelt amazing and I was hungry. So I cut it, we photographed it and then ate it. Now, by doing that I not only ruined the picture because the cheese sauce had not ‘set’ so it ran everywhere but, I also burnt my mouth. I have no idea why Lasagne seems to create these ridiculous hot steam pockets just waiting for the impatient people.
Aside from that, the recipe worked like a dream and tasted incredible.
