I have lots of recipes that I have been working on and they take quite a few runs to get them right, and when they are right, even more time to test and double check the recipe works as you thought it did.
One of those recipes was a slow cooked Thai beef penang. Yesterday I made the recipe for the last time and I have to say I was really pleased, it was delicious and the recipe worked so well with the soft gorgeous beef. It wasn’t super spicy but was absolutely full of flavour. I made the paste before work, then got it into the oven at lunchtime so that by the time we finished work the house smelt amazing and there was nothing to do. Just fabulous.
