Meat free Monday today and while flicking through Veneto: Recipes from an Italian Country Kitchen by Valeria Necchio I saw the clam linguine and remembered just how good it was.  Once I got that into my head it was impossible to get it out.  So we decided to leave out the clams, add a little stock and turn it into lemon pasta, it was so nice and felt light too.
