I really have fancied a chicken tikka masala this week and so I went hunting through my cookbooks for a recipe.  I was really surprised to see I only had 1 recipe and I did not have any lamb dhansak recipes at all - in fact any dhansak recipes despite having 5 Indian cookbooks, I do understand chicken tikka masala is an English dish really.  Anyway I turned to the internet and was really intrigued by the recipes on Glebe Kitchens site.  His curries use a base sauce which I have seen before and so was intrigued to try.  We found a chicken tikka masala and a lamb dhansak.  The base sauce cooks for a long time and then there was an Indian spice mix and a garlic and ginger paste, all of which took some prepping.  We then made the 2 curries and the tikka masala was fabulous, as good as the very best Indian restaurant I have been to.  The dhansak needed a little tweaking for our tastes, a little extra sour, sweet and hot but overall it was wonderful.
