I have been looking at recipes and think I am going to make a choux pastry for Christmas day.  They are little 'wreaths' just smallish little profiteroles joined together in a circle. I am thinking if I get green pistachio or green food colouring and make a caquelon it will look even more like a wreath.  I also want to make the inside praline flavoured, I really love praline. Today I tried choux for the very first time and although bigger than anticipated (!) I was really pleased with how they turned out.
