We have leeks in the fridge needing using up and I came across an interesting sounding noodle dish - leek and udon noodles with Japanese flavouring.

Whilst the umami rich broth was very nice, I am not sure the leeks went very well at all.  This is a recipe I would like to tweak and play with a little to get it perfect.  It was very quick which is always a plus and the instant broth worked so well with the noodles. One to return to.
