I love bank holidays, a nice long weekend to enjoy and a short working week ahead, what’s not to love. 

Today I wanted to give our millionaires shortbread a final run before publishing.  Clare asked if it is difficult to make and this stumped me because it is not difficult but there are a few processes and the caramel catches so easily.  Today I was trying to multitask and so caught the pan and had to sieve the mixture and carry on. Remember if you do try it to not multitask nor move, once you start just stir stir stir.

Anyway, I have to say it is a delicious recipe and a slice is perfect with a cup of tea.  The salt in the caramel layer, the biscuit being not too sweet means that the whole thing eats really well and doesn’t feel too toothachingly sweet.  The trouble is, I am not entirely sure it is low enough in calories to eat the amount I managed to.  Oops!
