We have porchetta left over and so went out and bought some fresh baguettes and had possibly the best sandwiches ever.  Porchetta is lovely and we cooked it perfectly with the crackling puffing beautifully so it was crunchy but soft enough to eat without breaking a tooth.  The baguettes were so delicious I wish we had cooked a much larger piece of pork.
