I can’t believe it is the last day of November. We have been getting into the Christmas spirit by coking our favourite Christmas spiced dishes, and tonight was Christmas spiced beef short ribs. I love short ribs, it is such a fantastic cut and the marbling through them is wonderful, it keeps them so juicy. We put a spice rub over them - full of cloves, cinnamon, nutmeg and smoky chipotle and paprika and leave them for an hour before cooking them in orange juice and beef stock and star anise. The whole house smelt like Christmas it was so wonderful and they tasted just divine.
