I needed to decide today what to cook for tomorrow and it always takes some thought when people are over. I have some leftover egg whites and some strawberry puree so pudding was sorted, a meringue tower with strawberry cream and fruit.  Also we thought chicken cordon bleu is really quite simple and very delicious and so easy to assemble if you do the prep beforehand.

I also had to bake these cookies. The dough had set well and they looked great but the seal on my oven broke so I knew baking them may prove challenging. He said to bake them for 4 mins, turn, 4 more. After 8 minutes my cookies were nowhere near done. 16 mins, still not done. They took 24 mins, it is difficult to decipher whether it was the oven, his timings or both. Hopefully when the oven is fixed next week I can try again and tell you.  The kids both said the cookies were amazing so I am sure I won’t have any shortage of volunteers. I can’t tell you how relieved I am that they actually worked out.  Who would have thought a recipe for a ‘beginner’ would turn out to cause me so many issues.  It just goes to show that everybody, no matter how much they cook, must thoroughly read the recipe.
