I have been recipe testing lamingtons for the IT group cooking and finally think I am there with it.  It is a passion fruit sponge with a mango white chocolate coating and covered (possibly controversially) with pistachios.  I am toying putting in some passion fruit curd as it really does lift it even though without it  they are so nice and so tropical.  It makes it easy to think of the sunshine even though looking outside feels like autumn.
