I went a bit crazy last week and bought all manner of brassicas, they just looked so wonderful I could not stop myself!
I made the kale, caramelised celeriac and cacioricotta from Three by Selin Kazim and it was areally deliciously yummy, I absolutely loved it.
I did make some subs, Selim said you could sub caramelised cauliflower puree instead of celeriac and parmesan for cacioricotta which is what I did. I also found kalettes which are a sprout kale hybrid so I subbed the kale and Brussels for these, they are such a lovely vegetable.
I really love brassicas, like REALLY love them - Rhona thinks I am slightly strange for this ha ha but I really do. I went a bit crazy shopping the other day and bought lots of veg, cauliflower, kalettes, hispi cabbage but to name a few. I see vegetables and just can’t help it. So after buying them I obviously needed to use them and so was going through Eat Your Books for inspiration and came across this recipe. I really do like this book, everything I have made from it has been fabulous so I was so excited for this.
Although for the puree, I didn’t take it as dark as the recipe and I just couldn’t get it silky smooth but it was delicious nonetheless.
The hispi I cut into quarters and caramelised both sides and I left them whole rather than slicing them. The kalettes I made according to the recipe for the kale and Brussels. I also added some pickled green cauliflower and some crispy cauliflower leaves then topped everything with Parmesan and pistachios according to the recipe.
This was such a lovely dish, the pickled cauliflower really lifted the whole dish and the pistachio and crispy leaves gave the texture. I wish I had made more of the pickles because they were so good. I would definitely make this again it was absolutely delicious.
