Today we had the nicest lunch, tuna mayo and cheese toasties, not toast but proper toasties where you butter the outside of the bread and heat until everything is melted and the outside is golden and crispy.  You mix your tuna with mayo and season with a little salt and lots of black pepper. You don’t butter the inside of the sandwich, you put the tuna on one piece of bread, top with a slice of cheese, put the next slice on and butter the outside. You then put this in a hot frying pan on a medium heat and fry both sides until deeply golden.

Tuna toasties are so amazingly gorgeous and perfect for the occasional treat.
