Today we made a gorgeous sticky toffee banana loaf, it had toffee sauce all over the top. It was so light and tasted incredible.  What always amazes me about anything sticky toffee like is how the batter often looks totally curdled until the flour is incorporated (and even then sometimes after that) but it always bakes gorgeously.  I feared it would be too sweet with the sauce but actually it didn’t taste very sweet, just perfect. The loaf has already almost gone already.
