Today was our IT monthly cooking club which really was fun. Everybody really got into the spirit of it making the gin and tonic lemon cheesecake and it went really well, this cheesecake really is very easy to do and it is really refreshing which in the summer is so nice. I love lemon cheesecake. Well, any cheesecake actually!

As I made the lemon cheesecake last week, as we were making the cheesecake as a group I was recipe testing a strawberry prosecco cheesecake which was absolutely fantastic.  Honestly I had a slice and thought I need another, so delicious I cannot even explain, you will just need to make it. Wimbledon always makes me think of strawberries and sparkling wine and this is just perfect.
