Coffee steaks

Ingredients
4 steaks of your choice  
Butter 

Spice mix Ingredients  
2 tbsp ground coffee
2 tbsp dark-brown sugar 
1 tbsp salt 
1 tbsp ground pepper 
1 tbsp paprika 
1 tbsp ground coriander 
1 tsp chilli powder 
1 tsp mustard powder 
1 tsp ground ginger 
1 tsp dried oregano 

I like to use the coffee from my used Nespresso capsules, it works a treat.

Method
Put all the ingredients for the spice mix in a bowl and thoroughly mix. 

To cook inside, heat your pan to medium hot and put in 1 tbsp oil and heat until your pan is really hot without smoking.  Put your Steak in and cook for 3 minutes per side for medium, don’t disturb the steak or touch it at all for at least the first 2 minutes per side as you want it to get a nice crust on it.  After 6 minutes in total, remove the steak to a plate. 

Put the spice mix over the steaks both sides.  Return the steaks to the pan and cook for a further 2 minutes per side, just long enough for the sugar to caramelise.  Remove from the pan and put a knob of butter on the top of each steak.  Rest for a couple of minutes. 

To cook outside, wait until the flames on your braai or bbq has stopped and it is very hot and put on your steaks.  Cook for 2½ minutes per side without disturbing.  Remove to a plate and put the spice mix on both sides.  Return the steaks to the braai and cook for another 2 minutes per side, just enough to caramelise the sugar.  Remove and put a knob of butter on the top of each steak and rest for a couple of minutes.
