Coffee steaks

Serves 4

Ingredients
2 steaks of your choice  
40g butter 

Spice mix Ingredients  
1 tbsp ground coffee *
1 tbsp maple syrup 
½ tbsp flaked salt 
¼ tsp ground pepper 
½ tbsp smoked paprika 
1 tsp ancho chilli powder
½ tsp ground cumin 
½ tsp onion granules 
½ tsp garlic granules
1 tsp dried oregano 

I like to use the coffee from my used Nespresso capsules, it works a treat.

Method
Put all the ingredients for the spice mix in a bowl and thoroughly mix. 

Dry the steaks with a kitchen roll.  Rub the spice mix over the steaks and put to one side. 

To cook the steak, heat your pan to medium hot and put in ½ tbsp oil.  Swirl the oil and add both of your steaks so they sit on the fat on the side, you may need to hold them with tongs.  Leave for a couple of minutes until golden.  Turn your steak so it now sits flat side down and for 3-5 minutes per side for medium.  Turn the steak over and cook for another 3 minutes.  Put the butter into the pan and swirl.  As soon as the butter has melted start to baste the steaks continually with the butter for 2 minutes.  Turn off the heat and leave to rest for 3-5 minutes.

Cut the steak into slices and serve.
