Crab mayonnaise

Serves 2
(eaily doubled)  

Preparation time: 15 minutes 

Ingredients
100g white crab meat 
2 tbsp mayonnaise 
Salt 
Pepper 
Small squeeze of lemon or lime

Method
The first thing you need to do with the crab is ‘pick through it’ checking for shell.  It is best to do this with clean hands but you can use forks.  You need to just go through the crab slowly and carefully by moving the crab apart.  If you do find shell, just discard it. 

Add the mayo, salt and pepper and gently mix.  Add a squeeze of lime or lemon to taste and serve on fresh bread, crackers or with avocado.  Or, feel free to just steal it from the bowl to ‘quality check’…
