Easy crispy chicken

Serves 4  

Preparation time: 5 minutes
Cooking time: 25 - 35 minutes   

Ingredients
Oil 
4 chicken breasts (skinless, if you buy with skin on just pull the skin off, freeze and keep for another recipe) 
50g cornflour 
2 egg whites or 1 whole egg 
100g panko breadcrumbs  

Method
Preheat the oven to 190c. 

Get a large metal baking tray (or 2 smaller metal pans) and cover with foil and lightly oil   Put into the oven to heat

Get 3 bowls now, put the cornflour in the first bowl, the egg whites (or whole egg) into the second and the panko into a third bowl.   

You now want to take a few sheets of kitchen roll and pat the chicken so it is dry, then dust the chicken breasts with the cornflour, shake off any excess and dip straight into the eggs and then once coated put into the breadcrumbs, pressing the breadcrumbs into the chicken.

Put the chicken into the hot oil and put into the oven and bake for 25-30 minutes until golden and cooked through, turning 15 minutes.
