Falafel wraps

Serves 2  

Preparation time: 15 minutes
Cooking time: 5 minutes

The great thing about this is how easy it is to totally change the flavour depending on what you have in your fridge and what you fancy.  Use any 2 of the below, such as garlic mayo and harissa or hummus and harissa or hummus and ras mayo, or mix it up and use chipotle mayo or sweet chilli sauce.

Ingredients
225g halloumi, sliced (optional)
2 x spring onions (sliced)
2 wraps or 2 flat breads
6 falafel
Rocket
2 tbsps Sweet chilli sauce (optional)
8 tbsps hummus (optional)
8 tbsps harissa (optional)

Ingredients for the Tahini yoghurt
4 tbsp Greek yoghurt
1 tbsp tahini
2 tsp lemon juice
¼ tsp ground cumin
Salt
Pepper

Ingredients for the garlic mayonnaise
4 tbsp mayonnaise or yoghurt~
½ clove of raw garlic (grated)
½ tbsp lemon juice
½ tsp Dijon mustard
Salt
Pepper

Ingredients for the harissa mayonnaise
1-2 tbsp harissa
60ml mayonnaise
Salt

Ingredients for the chipotle mayonnaise
¼ tsp - 1 tsp chipotle chilli flakes (depending on how spicy you like it, I use 1 tsp)
1 tsp - 1 tbsp boiling water (depending on how many chilli flakes you use)
60ml mayonnaise
Salt 

Method
Heat the falafel (you can have cold if you prefer).

If you are using the halloumi then get either a griddle pan or frying pan on to heat.  When hot add a touch of olive oil and your halloumi.  Cook until golden, 2-3 minutes per side.

While the Halloumi is cooking, put your flat breads either under the grill or in your toaster and just warm trough.  You don’t want them to go golden or hard, just to be warm. 

Smear the inside with some of the mayo or hummus and then top with rocket, spring onion, halloumi, falafel and top with the either one of the chilli sauces and serve.
