Midweek moules and frites

20 - 30 minutes 

What makes this so quick is the pre-prepped mussels, if you have more time then you can replace with mussels of your choice.

Ingredients
Oven cook French fries 
1 onion, chopped 
3 garlic cloves, finely chopped 
Thai curry paste - I used a jar of Barts 
2 tbsp palm sugar 
1 tbsp fish sauce 
1 tin of coconut cream 
1 tbsp olive oil 
2 boxes of pre-prepped mussels (in garlic and wine or garlic butter - you will wash off the sauce so it doesn’t matter) 
1 lime 

Method
Preheat your oven according to the chip packet instructions and get your chips in to cook. 

Meanwhile wash your mussels of the sauce they come in.  If you have longer and want to get fresh mussels just set aside longer to clean and debeard. 

Cook the onion until just beginning to go golden.  Add the garlic and cook for 2 minutes.  Add the Thai curry paste and cook for 30 seconds.  Add the palm sugar, fish sauce and coconut milk and stir. 

Add the mussels, put on the lid and cook for 7 minutes.  Squeeze in the fresh lime juice. 

Season your chips, put into bowls and top with your mussels and broth.
