Peri peri chicken burger

Serves 4

Preparation time: 30 minutes
Cooking time: 20 minutes
Marinating time: 1 hour - 24 hours

Ingredients
4 chicken breasts
200ml peri peri sauce
2 tbsp oil
Brioche buns
4 tbsps mayonnaise
4 slices of cheese
½ iceberg lettuce, shredded
Salt
Freshly ground black pepper

Method
Cover the chicken breasts with the peri peri sauce, cover and put into the fridge for at least an hour.

Preheat the oven to 180c.  Put the oil into an oven dish and put into the oven.

When the oven is hot, put the chicken into the dish and cook for 25 minutes, turning half way through.  Check the chicken is thoroughly cooked through.

Put a tbsp of mayonnaise on the bottom of the bun and top with the some of the iceberg lettuce.  Put the chicken on top of the lettuce, season with a little flaked salt and freshly ground black pepper.  Put a tbsp of the sauce on the top of the bun, then put on a slice of cheese and put on top of your chicken.
