Pizza arrabiata

Serves 4

Preparation time: 10 minutes
Cooking time: 90 seconds in your pizza oven or 12-15 minutes in your oven

Ingredients
1 quantity of pizza dough
250g (ish) baby plum tomatoes, halved
160g nduja sausage, sliced or removed from the skin and broken
100g Peppadew peppers
250g mozzarella, dried with kitchen towel and chopped into chunks
2 tsps dried chilli flakes
2 tsps chilli oil
Salt
Freshly ground black pepper

Method
Preheat your pizza oven to 400c or your conventional oven to the hottest setting for at least 30 minutes, with your pizza stone or tray in the oven while it gets hot.

Cut your dough in half and roll out to 25cm on a lightly floured surface.

If you are using a pizza oven, flour your pizza peel and then put the dough on to the peel - you will build your pizza on this.

If you are using a conventional oven, build the pizza carefully on the hot baking tray.

Scatter half of the tomatoes over the pizza base, leaving a little gap around the edge. Put half of the nduja and Peppadew peppers, then half of the mozzarella. Sprinkle the chilli flakes over and put into the oven until bubbling and golden.  If you are using a pizza oven, turn every 20 seconds or so.

Remove from your oven, season and drizzle with the chilli oil.
