Portabellini mushrooms stuffed with vegan chorizo style sausage

Serves 4  

Preparation time: 10 minutes
Cooking time: 25 minutes

Ingredients
12 Portabellini mushrooms 
4 chorizo style vegan sausages
2 tsp red chilli flakes 
1 tsp chilli powder 
2 tsp smoked paprika
Salt and pepper 
4 slices of thick white bread, blitzed 
50g pecorino or vegan Parmesan
OR
100g cheddar or cheddar style cheese, grated

Method
Clean the mushrooms with a damp piece of kitchen towel to remove any dirt/grit and remove the stalks. Season with a little salt.  Grill on a medium/low heat until cooked but not brown - this will be 10-15 minutes. 

Take the casings off of the sausages and put into a bowl with the chilli and paprika and mix through so well incorporated.

You can now either mix the breadcrumbs, the Pecorino/Parmesan and black pepper or top just with cheddar.

Put equal amounts of the sausage mixture into the mushrooms and with your spoon push down. Top with the breadcrumb mixture or just top with cheddar.

Grill on a medium heat until golden, about 7 -10 minutes.
