Simple pasta

Serves 4

Preparation time: 15 minutes
Cooking time: 15 minutes

Ingredients
225g bacon lardons cut into smallish pieces 
1 tbsp olive oil 
1 onion, finely chopped 
250g cherry tomatoes, halved 
4 garlic cloves, finely chopped 
120ml white wine 
25g of parmesan finely grated 
400g dried pasta 
Salt 
Pepper  

Method
Put on a large pot of heavily salted water and bring to the boil.  When the water is boiling add the pasta and cook according to packet instructions. 

Meanwhile fry the bacon over a medium heat in 1 tbsp of oil for 5-10 minutes until browned and crispy.  Add the onion and cook for 5-7 minutes until soft and translucent.  Add the garlic and cook for a further minute and add the tomatoes. Increase the heat to high and cook for a further couple of minutes before adding the white wine. Continue to cook for a few more minutes to remove the raw alcohol taste.  Add half a cup of the pasta water and put into the sauce, leave bubbling and cooking until your pasta is cooked and drained. 

Once the pasta is cooked add to the sauce and make sure all the pasta is thoroughly coated.   Check for seasoning and serve with the parmesan and freshly ground black pepper.
