Sweetcorn fritters

Serves 2

Cooking time: 20 minutes

Ingredients
100g plain flour 
1 tsp baking powder 
1 tsp paprika 
100ml milk 
1 egg 
1 x 295g tin of sweetcorn, drained (or defrosted frozen sweetcorn) 
2 spring onions, finely chopped 
Salt 
Pepper  
Flavourless oil for frying 

Method
Preheat the oven to 180c and put in a lined baking dish or tray. 

Put the flour, baking powder, paprika, salt and freshly ground black into a large bowl or jug and mix.  Add the milk and egg and mix. Add the sweetcorn, and spring onions and just mix through. 

You want to shallow fry the fritters so put a little oil into a large frying pan and heat on medium.  If you have an ice cream scoop use that to scoop out a heaped scoop for the perfect amount of mix, otherwise you want roughly 2 tbsps of the mix.  Cook 4 at a time for roughly 5 minutes each side, until they are golden then flip and repeat. When you flip, press down on the top to flatten it somewhat. 

Drain on kitchen paper, turn off the oven and put this batch into the oven. 

Repeat until all of your batter has been used up, putting your batches into the oven.  I get roughly 10 fritters from this batter 

A word of warning here, sometimes the corn pops (think pop corn) so do take care when frying.  If any bits of sweetcorn break off, turn and remove from the pan before they pop and splash you will hot oil. 

Put a little flaked salt on each fritter and serve hot with some sweet chilli sauce and a green salad.
