Vanilla spice coffee syrup

Makes 350 ml

Cooking time: 15 minutes

Ingredients
250ml water 
200ml sugar 
4 cardamom pods, crushed and 
1 vanilla bean, split and seeded

A bottle 

Method
Start by ensuring your bottle is sterilised.  To do this preheat your oven to 180c.  Wash your bottle thoroughly in hot soapy water, rinse but don’t dry.  Put the bottle and lid onto a baking tray and heat for 15 minutes. 

When your bottle has been in the oven for 5 minutes, add the water to a saucepan and add the sugar and spices. Over a medium heat bring to a boil, stirring from time to time.  Once the syrup comes to the boil, reduce the heat and simmer for 5 mins.  

Take the bottle out of the oven in gloves and using a funnel and sieve pour the syrup very carefully into your bottle. Alternatively leave both to cool a little. Take care - your bottle and your liquid need to both be the same temperature to not crack and break the bottle.
