Whole roasted cauliflower

Serves 4 as a side dish

Preparation time: 10 minutes   
Cooking time: 45 minutes - 1½ hours depending on the size of your cauliflower

Ingredients
1 whole cauliflower 
3 tbsps oil 
1 tbsp seasoning mix *

* I quite like paprika and onion or Portuguese but use salt or whatever seasoning you have and like 

Method
Heat the oven to 180c. 

Mix the oil and seasoning together. 

Cut the very bottom off of the cauliflower and put into a casserole pot or Dutch oven if you have one, I use my Le Cresuset.  Drizzle the oil over the cauliflower and under the leaves.  Roast for 45 mins and then test to see how tender it is.  It should be nicely soft when you serve it so if it is still a little hard put back into the oven and retest every 15 mins until the white is soft and the leaves are a little charred around the edges. 

Check the seasoning and adjust if necessary.
