The King’s Coronation

Tomorrow is the Coronation of King Charles III and love or loathe the Royals, you can't escape it so if you can't beat it, why not join it?

The Coronation has remained largely unchanged for more than 1,000 years and will tomorrow take place at Westminster Abbey.  Despite being named our King for several months now, following a period of mourning, tomorrow will see the King officially crowned alongside his wife the Queen Consort.  To celebrate we have a long weekend (so obviously we are expecting rain) and if you are a Royalist there are several events taking place. 

For anybody on the fence or throwing a party or having people over and not quite sure what to make, here are a few last minute ideas.

Sandwiches:
Cheese and onion
BLT
Warm egg mayo
Beef and horseradish 

Pastries:
Quiche, there are a few to choose from: a classic bacon and cheese, ham cheese and chives or a vegetarian pea and asparagus
Samosas, either meat or vegetarian
Coronation chicken pies
Feta and onion tart

Sweets:
Scones with clotted cream and jam
Chocolate cake with mascarpone
Gluten free lemon cake
Oreo chocolate cake
Raspberry shortbread
Chocolate truffle cookie

Any large tarts or cakes can be made to be individual, just use a cupcake or muffin tin and keep an eye on the oven as they won't take as long to cook.  If you do keep them large, pre-slice for ease of your guests.

Enjoy whatever you are doing and don't let the rain dampen your day.  At our Jubilee party last year after being sunny all morning, it suddenly poured, we just had to get up the gazebo and umbrellas quick smart before carrying on the party.
