Today was the cooking club at work and the vote went for baklava which is lucky because I perfected this recipe the other week.  It was a fairly long session because oh my word the buttering. It literally goes on and on and on but my goodness was it worth it.  The recipe I have is a nice mix of Turkish and Greek I think (sorry to any purists) so it has all of the perfect bits, making it really lovely.  I also took a Claudia Roden tip of pouring the syrup over the top once it has finished baking, and then baking it for 5 more minutes for really crispy pastry.  Really so good.  My hips don't even care it is that good.
