Tonight we made couscous and tomatoes from A Cook’s Book by Nigel Slater.
We really enjoy couscous and this read beautifully so I was really looking forward to it. It was really very tasty. The harissa tomatoes were delicious and the fresh herbs with mint lifted the couscous. It was really nice but I felt it did need something along side it (Rhona was happy as it was). I did think it would work alongside some feta or fish.
After work I put a mix of tomatoes in to bake and left the kitchen for a while and sat reading for half an hour - a nice way to wind down. Once the couscous was soft I added the herbs, squashed the tomatoes, added the harissa (Nigel says 1 tbsp but we love harissa so I added more - 3 tbsps in total) and for us, it was perfect.
This will most definitely be repeated, it was very easy going for a mid week meal and really took very little effort.
