Last night we decided to make the chicken and rice soup with sugar snaps and from Better at Home by Colu Henry

As I have said before, this is the kind of dish we really enjoy, and eat a lot. To us it is good for the mind and body, which was really needed last night.

I followed the ingredients and recipe although reduced the birds eyes to 1½ as they were very spicy this time.  I also put all of the spring onions in in stage 1 even though I cut them and kept them separated on the board. GRRR. I used home made chicken stock for a better, more flavourful dish. Because the birds eyes were so strong we both chose not to add any chiu chow chilli oil at the end, it was still very delicious.

This was, as all of the others are, delicious and it worked its magic.
