I love tiramisu and have been playing around with some ideas to turn it from something very rustic looking to something more elegant. I’ve made a tiramisu panna cotta before which had the mascarpone, coffee, liqueur etc all in with the set cream, this time though I wanted the cream to have the panna cotta taste, have the biscuits, and a mocha sauce. I always have this fight with gelatine how much to put in so it’s just set. It’s difficult and so I’m used to needing to do the recipe twice for perfection. I made ladies fingers (a sponge/biscuit hybrid) and oh my gosh they were fantastic. Never again will I ever buy them. 

The Whiskey Exchange did a virtual chocolate and alcohol pairing which was really fun. What I did learn is that I am a total wuss when it comes to spirits.

I also made bruschetta today, I found some gorgeous tomatoes in Sainsbury’s Friday and some bread which caught my eye, there’s a company called Crosta & Mollica which do Italian goodies. They have this pane pugliese bread which is so so good and perfect for bruschetta. So I toasted the bread, rubbed with raw garlic, added the chopped tomatoes, salt, olive oil and fresh basil, honestly I can’t tell you how fantastic it was. Super simple but amazing if you get good ingredients.
