We have been tinkering and playing with a very simple chicken and leek pasta for a while now.  It has been through our round of testers and is finally ready to share with you.  It is made with leftover chicken and despite having mascarpone in it, it feels still fresh.  I love pasta, it is often really quick and easy which is perfect for a mid-week meal, and also, lets be honest, pasta is one of the worlds delights. Matt doesn’t like peas and so often moans but he took a forkful and just declared oh my! And proceeded to eat a huge bowl without even picking out the peas.

If you are a vegetarian, just increase the leek and remove the chicken.

We made this tonight to take pictures and give it that one last test and honestly, I could have just kept eating more and more. I am trying to only eat sensible portions now - I think one of the reasons I am overweight is portion control which can so easily spiral.  So I very sensibly stepped away.
