Tonight we had a leftovers dish.  We had some leftover bacon, mascarpone, ½ a stock pot and a leek  and so thought they would make a great pasta dish.  I fried off the leek and bacon, added the mascarpone, stock pot and a cup of pasta water, mixed through cooked pasta and hey presto, one super easy bacon and leek pasta, a new meal making the most of leftovers.
