So tonight I made jalapeño poppers, prawn and habanero lasagne followed by lime panna cotta and chocolate biscotti.

When we have people over I don’t like to fry as it not only is time consuming and means you have to stay in the kitchen and worst of all is the smell in the air, fine for if you are home but not really if you have people over.  For this reason I wanted to try to make the poppers in the oven.  Now the taste was fantastic and I loved that they were not at all greasy but the actual chilli collapsed down a little so they looked a little flat.  I used nachos for the breadcrumb aspect and that really was good.  This recipe needs a little tweaking as I want to get around the collapsing and it also needs a little more spice.

I decided to tweak my own panna cotta recipe but made a fundamental error.  I totally forgot that when you add citrus it thickens the cream instantly. So I had added the gelatine then when I took it off of the heat I added the lime it thickened it, I knew at that point I should have added less gelatine as the wobble would not be how I like it.  The taste was really lovely, as was the texture but it just needed to be a little less set.
